For the Jacket Potatoes

  • 4 baking potatoes
  • 1 tbsp sunflower oil

For the Home-Baked Beans

  • 1 carrot, diced
  • 1 celery stalk, diced
  • 400g can haricot beans, drained
  • 2 tomatoes, chopped
  • 1 tsp paprika (sweet or hot, depending on taste)
  • 1 tsp Worcestershire sauce
  • 2 tbsp chopped chives, to serve

Instructions

  1. Prepare and bake the potatoes: Heat your oven to 200°C (180°C fan)/gas mark 6. Scrub the potatoes clean and dry them thoroughly. Prick each potato several times with a fork. Place them directly onto the oven shelf and bake for 1 to 1½ hours until they are soft when squeezed gently.
  2. Cook the vegetable base: After the potatoes have been baking for 30 minutes, heat the sunflower oil in a pan over medium heat. Add the diced carrot and celery and gently cook for about 10 minutes until they soften.
  3. Add beans and tomatoes: Stir in the drained haricot beans, chopped tomatoes, and paprika. Continue to cook gently for 5 minutes until the tomatoes become soft and pulpy.
  4. Finish the beans: Add 100ml of water and the Worcestershire sauce to the pan. Cook for another 5 minutes, then cover the pan and keep the mixture warm until the potatoes are done.
  5. Serve: Split open the hot baked potatoes and spoon the warm bean mixture inside. Scatter the chopped chives over the top and serve immediately.

Notes

  • The beans can be made ahead of time and reheated in the microwave, making this a great recipe for meal prep.
  • Try serving the beans over granary toast for a quick supper option.
  • For a cheesier twist, stir in a handful of grated cheddar into the beans before serving.
