Meat and Oils
- 1 lb grass fed beef (93/7 lean to fat ratio)
- 1 tablespoon olive oil
Vegetables
- 1/2 cup frozen mixed vegetables
- 2 red skinned potatoes, diced
- 2 hot house tomatoes, diced
- 3/4 cup yellow onion, diced
- 1 tablespoon minced garlic
Liquids and Seasonings
- 1 (32 oz) beef broth
- 2 bay leaves
- 2 teaspoons salt
- 2 teaspoons pepper
Instructions
- Sauté Aromatics and Brown Beef: Set the Instant Pot to sauté mode. Add 1 tablespoon of olive oil, then add the diced onions and minced garlic. Sauté for about 1 minute until fragrant. Add the grass-fed ground beef and cook until browned, stirring occasionally to break up the meat.
- Season and Add Vegetables: Sprinkle in 2 teaspoons of salt and 2 teaspoons of pepper, stirring well to combine. Add the diced potatoes and tomatoes to the pot and stir thoroughly.
- Add Broth and Bay Leaves: Turn off the sauté mode. Pour in the 32 oz of beef broth and add the two bay leaves to the pot, distributing them evenly.
- Pressure Cook: Place the Instant Pot lid on and set it to the sealed position. Press the pressure cook or manual button and set the timer for 8 minutes. Once cooking is complete and the Instant Pot beeps, perform a quick release to release the pressure safely.
- Add Frozen Vegetables and Warm Through: The Instant Pot will switch to keep warm mode. Stir in the 1/2 cup of frozen mixed vegetables. Let the soup sit for about two minutes to allow the vegetables to warm through and soften.
Notes
- You can use fresh mixed vegetables instead of frozen if preferred; add them along with the potatoes and tomatoes before pressure cooking.
- Adjust salt and pepper to taste after cooking if desired.
- For a thicker soup, mash some of the potatoes with a spoon before adding the mixed vegetables.
- If you do not have an Instant Pot, this recipe can be adapted for stovetop pressure cookers or slow cooking.
- Remove bay leaves before serving to avoid biting into them.
