  • 1 tablespoon olive oil
  • 1 cup water

  • 1 bottle of barbecue sauce of choice
  • 1 fresh pineapple, sliced
  • 12 slider buns (1 package)

Instructions

  1. Prepare Chicken: Remove any remaining fat from the chicken breasts and slice them into strips. Add the sliced chicken to the Instant Pot along with 1 tablespoon of olive oil, then sprinkle with cayenne pepper (if using), paprika, cracked black pepper, liquid smoke, and pour in 1 cup of water.
  2. Pressure Cook Chicken: Secure the lid and set the valve to sealed. Select the pressure cook setting on high pressure and cook for 25 minutes. Once done, perform a quick release to let out the steam safely. While the chicken is cooking, slice the fresh pineapple into desired pieces.
  3. Prepare Chicken with Sauce: Drain the liquid from the Instant Pot, then toss the cooked chicken strips thoroughly with your favorite barbecue sauce to coat evenly.
  4. Assemble Sliders: Lightly toast the slider buns. Place a generous amount of barbecue chicken on each bun, and top with fresh pineapple slices. Serve immediately with sides such as chips, beans, or coleslaw for a complete meal experience.
