For the Taco Seasoning:

  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander
  • ¼ teaspoon oregano

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 preferred)
  • 3 tablespoons tomato paste
  • 1 large yellow onion (diced to ½″)
  • 2 large bell peppers (diced to ½″)
  • 1 28-ounce can crushed tomatoes (fire roasted if available)
  • 1 4-ounce can diced green chiles
  • 1 14-ounce can black beans (drained and rinsed)
  • 1.5 cups frozen corn
  • 2 cups low sodium beef broth
  • 2 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 12 tablespoons chili powder (depending on preference for heat)
  • 1 tablespoon cumin
  • 2 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander

Instructions

  1. Prepare the Taco Seasoning: Combine all the taco seasoning ingredients in a small bowl or jar and mix well.
  2. Cook the Ground Beef: Heat olive oil in a skillet, brown the ground beef, and add the taco seasoning, stirring well.
  3. Add Ingredients to Slow Cooker: Transfer the beef to a slow cooker, add in the remaining soup ingredients, and mix.
  4. Cook the Soup: Cover and cook on low for 5-6 hours or high for 3-4 hours.
  5. Finish and Serve: Stir in lime juice and cilantro before serving. Adjust seasoning if needed and garnish with your favorite toppings.

Notes

  • You can adjust the spice level by adding more or less chili powder.
