For the Taco Seasoning:
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon coriander
- ¼ teaspoon oregano
For the Soup:
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 preferred)
- 3 tablespoons tomato paste
- 1 large yellow onion (diced to ½″)
- 2 large bell peppers (diced to ½″)
- 1 28-ounce can crushed tomatoes (fire roasted if available)
- 1 4-ounce can diced green chiles
- 1 14-ounce can black beans (drained and rinsed)
- 1.5 cups frozen corn
- 2 cups low sodium beef broth
- 2 tablespoons lime juice
- 2 tablespoons chopped cilantro
- 1–2 tablespoons chili powder (depending on preference for heat)
- 1 tablespoon cumin
- 2 teaspoon paprika
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon coriander
Instructions
- Prepare the Taco Seasoning: Combine all the taco seasoning ingredients in a small bowl or jar and mix well.
- Cook the Ground Beef: Heat olive oil in a skillet, brown the ground beef, and add the taco seasoning, stirring well.
- Add Ingredients to Slow Cooker: Transfer the beef to a slow cooker, add in the remaining soup ingredients, and mix.
- Cook the Soup: Cover and cook on low for 5-6 hours or high for 3-4 hours.
- Finish and Serve: Stir in lime juice and cilantro before serving. Adjust seasoning if needed and garnish with your favorite toppings.
Notes
- You can adjust the spice level by adding more or less chili powder.
- For a thicker soup, reduce the amount of beef broth used.
