Instructions
- Preheat the Oven: Set your oven to 300 degrees Fahrenheit (150 degrees Celsius) to prepare for baking the granola evenly at a moderate temperature.
- Mix Dry and Wet Ingredients: In a large bowl, combine the old fashioned rolled oats, wheat bran, dry mixed spice, ground cinnamon, ground nutmeg, fresh ginger, honey, and melted coconut oil. Mix thoroughly so all the oats and bran are coated with the honey and oil mixture and evenly spiced.
- First Baking: Spread the mixture evenly onto a baking tray and sprinkle the coarse sea salt over the top. Bake in the middle rack of the oven for about 15 minutes to start toasting the oats and spices.
- Continue Baking and Stirring: After 15 minutes, stir the granola using a wooden spoon and bake for an additional 10 minutes. Stir again and bake for a further 10 minutes until the granola turns medium golden brown all over.
- Add Nuts and Seeds: Stir in the almonds, cashew nuts, and sunflower seeds. Return the tray to the oven and bake for another 20 minutes, stirring once halfway through to ensure even toasting and prevent burning.
- Mix in Dried Apricots and Cool: Once the granola is nicely browned and toasted, remove it from the oven. Stir through the roughly chopped dried apricots. Spread the granola out and set aside to cool completely before storing.
