Instructions

  1. Prepare the Rice: Cook the long grain rice according to the package instructions until tender and fluffy. Set aside.
  2. Season the Chicken: Cut the chicken breasts into bite-sized, 1-inch pieces. In a bowl, season the chicken with salt, pepper, paprika, and garlic powder, ensuring all pieces are well coated.
  3. Cook the Chicken: Heat a large skillet over medium-high heat and add olive oil. When the oil is hot, place the seasoned chicken pieces in the skillet without stirring for 3-4 minutes to allow browning. Then stir occasionally and cook for an additional 3-5 minutes until the chicken reaches an internal temperature of 165°F and is cooked through. Remove from heat.
  4. Make the Honey BBQ Sauce: In a small bowl, whisk together the BBQ sauce and honey until smooth and fully combined.
  5. Coat the Chicken: Pour the honey BBQ sauce over the cooked chicken in the skillet and stir until all pieces are evenly coated with the sauce.
  6. Heat Beans and Corn: Warm the black beans and corn either in the microwave or in a skillet until heated through.
  7. Assemble the Bowls: Place a scoop of cooked rice on one side of each bowl. Add chopped romaine lettuce to the other side.
