Ingredients
Scale
Chicken and Sauce
- 2 pounds chicken breast, cut into 1-inch bite-sized pieces
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup BBQ sauce
- 1/4 cup honey
Rice and Vegetables
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 head romaine lettuce, chopped
Garnishes
- ½ cup shredded cheddar cheese
- ¼ cup pickled onions
- ¼ cup chopped cilantro
- ¼ cup ranch dressing
Instructions
- Prepare the Rice: Cook the long grain rice according to the package instructions until tender and fluffy. Set aside.
- Season the Chicken: Cut the chicken breasts into bite-sized, 1-inch pieces. In a bowl, season the chicken with salt, pepper, paprika, and garlic powder, ensuring all pieces are well coated.
- Cook the Chicken: Heat a large skillet over medium-high heat and add olive oil. When the oil is hot, place the seasoned chicken pieces in the skillet without stirring for 3-4 minutes to allow browning. Then stir occasionally and cook for an additional 3-5 minutes until the chicken reaches an internal temperature of 165°F and is cooked through. Remove from heat.
- Make the Honey BBQ Sauce: In a small bowl, whisk together the BBQ sauce and honey until smooth and fully combined.
- Coat the Chicken: Pour the honey BBQ sauce over the cooked chicken in the skillet and stir until all pieces are evenly coated with the sauce.
- Heat Beans and Corn: Warm the black beans and corn either in the microwave or in a skillet until heated through.
- Assemble the Bowls: Place a scoop of cooked rice on one side of each bowl. Add chopped romaine lettuce to the other side.
- Add Beans and Corn: Add scoops of black beans and corn on top of the rice and lettuce.
- Top with Garnishes: Sprinkle shredded cheddar cheese and pickled onions over the bowl. Drizzle with ranch dressing and garnish with chopped cilantro to finish.
Notes
- Pickled onions add a tangy crunch, but you can substitute with raw red onions or omit if preferred.
- For a spicier kick, add a pinch of cayenne pepper to the chicken seasoning.
- Use fresh corn if in season for optimal sweetness and texture.
- Leftover rice can be substituted with quinoa or cauliflower rice for a different texture or dietary preference.
