Chicken
- 1 pound boneless chicken breasts or thighs

- 2–3 cups egg noodles
- 1/3 cup shaved Parmesan cheese
- 1/4 cup chopped parsley
Instructions
- Prepare the base: Melt the olive oil and butter together in a large Dutch oven over medium heat. Add the chopped yellow onion and cook for 3 to 5 minutes until translucent. Next, add shallots, garlic, celery, carrots, thyme, sage, and rosemary. Season with salt and pepper. Cook for another 5 minutes to release the flavors.
- Add liquids and chicken: Pour in the dry sherry and chicken broth, stirring to combine. Add the bay leaf, chicken breasts or thighs, and optionally a Parmesan rind if available. Increase heat to high and bring the soup to a boil. Once boiling, reduce heat to low and cover. Cook for 20 minutes, or until the chicken is fully cooked. For deeper flavor, the soup can simmer on low for an additional 4 to 6 hours.
- Shred chicken and cook noodles: Remove the chicken from the pot and shred using two forks. Discard the bay leaf and Parmesan rind. Return shredded chicken to the pot, season the soup with additional salt and pepper to taste. Bring the soup back to a boil, then add the egg noodles. Cook for 6 to 8 minutes until the noodles are tender.
- Finish and serve: Stir in the shaved Parmesan cheese and chopped parsley until melted and combined. Serve hot, optionally topping with more Parmesan cheese for extra richness and flavor.
