- 1 tsp dried ground sage
- 1/2 tsp dried thyme, crushed with fingers
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp black pepper
- 3/4 tsp cooking or kosher salt (or 1/2 tsp table salt)
- 1/2 tsp sugar (optional)
- 2 tbsp olive oil

Instructions
- Make patties: In a large bowl, combine the pork mince with dried sage, dried thyme, onion powder, garlic powder, black pepper, salt, and optional sugar. Mix thoroughly with your hands to ensure even seasoning. Divide the mixture into 8 equal portions and form each into a patty approximately 1 cm (0.4 inch) thick. Press a shallow dent into the center of each patty to prevent them from puffing up during cooking.
- Cook patties: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Place half the patties in the pan and cook for 2 minutes on each side until golden brown and cooked through. Remove patties and place on a paper towel-lined plate to absorb excess oil. Add the remaining tablespoon of olive oil to the pan and cook the remaining patties the same way.
- Serve: Serve the cooked sausage patties hot with ketchup on the side. They make an excellent accompaniment to eggs, toast, or breakfast potatoes.
