Chilli

  • 1 tsp olive oil
  • 400g-500g beef mince
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp chipotle paste
  • 1 tbsp Cajun or fajita seasoning
  • 1 tbsp brown sugar
  • 1 tbsp cider vinegar
  • 400g can black beans, drained but not rinsed
  • 400g can chopped tomato

Rice

  • 300g brown rice
  • 600ml cold water
  • Pinch of salt (optional)

Guacamole

  • 1 tomato, chopped
  • 1 red onion, finely chopped
  • ½ small pack coriander, chopped
  • 1 lime, juiced
  • 2 avocados, stoned and peeled
  • Seasoning to taste

To Serve

  • 46 wholemeal tortilla wraps
  • Natural yogurt (optional)
  • Lime halves, to squeeze over (optional)
  • Grated cheddar (optional)

Instructions

  1. Prepare the chilli: Heat the olive oil in a frying pan over medium heat. Crumble in the beef mince and fry for 15-20 minutes, allowing it to release liquid which will bubble away. Once the mince sizzles in its fat, break it up with a wooden spoon and let it brown and caramelize all over.
  2. Cook onion with mince: Stir in the finely chopped onion and cook for another 10 minutes until softened.
  3. Add spices and simmer: Add the crushed garlic, chipotle paste, Cajun or fajita seasoning, brown sugar, and cider vinegar. Cook for 1 minute to release the flavors. Then stir in the drained black beans and chopped tomatoes. Simmer uncovered for 20 minutes until the mixture thickens.
  4. Cook the rice: In a medium saucepan, add the brown rice, cold water, and a pinch of salt if using. Bring to a boil, then reduce heat to low, cover, and gently simmer for about 20 minutes or until all water is absorbed. Turn off heat and leave covered for 10 minutes. Fluff with a fork before serving.
  5. Make the guacamole: Combine the chopped tomato, red onion, coriander, lime juice, and seasoning in a bowl. Mash with the peeled avocados to create a chunky guacamole.
  6. Assemble the burritos: Warm the wholemeal tortilla wraps. Spread a layer of guacamole on each, then add a generous helping of the cooked rice followed by the beef chilli. Top with natural yogurt, a squeeze of lime juice, and grated cheddar if desired.
  7. Serve: Wrap the burritos tightly, cut in half, and serve immediately with extra lime wedges and yogurt on the side.

Notes

  • The chilli can be made ahead and stored in the refrigerator for up to two days or frozen for up to one month.
  • Ensure frozen chilli is defrosted thoroughly and reheated until piping hot before serving.
  • For a vegetarian version, substitute beef mince with plant-based mince or additional beans.
  • Adjust the chipotle paste and seasonings according to your desired spice level.
  • Using wholemeal tortillas and brown rice increases fiber content making this recipe healthier.
