Description
Delicious grilled lemon herb chicken thighs marinated in a zesty blend of olive oil, fresh lemon juice, garlic, rosemary, and thyme, then grilled to perfection with crispy skin and juicy, flavorful meat.
Ingredients
Scale
Chicken
- 8 chicken thighs, bone-in and skin-on
Marinade
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well combined to create a flavorful marinade.
- Marinate the Chicken: Place the chicken thighs in a large resealable bag or shallow dish and pour the marinade over them, ensuring they are fully coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight to allow the flavors to fully penetrate the meat.
- Preheat the Grill: Heat your grill to medium-high heat to ensure a good sear and crispy skin.
- Grill the Chicken: Remove the chicken thighs from the marinade, discard any leftover marinade, and place them skin side down on the hot grill. Grill each side for about 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is nicely crisped.
- Rest and Serve: Remove the grilled chicken from the heat and let it rest for a few minutes to lock in juices before serving for an optimal flavor and texture experience.
Notes
- For best flavor, marinate the chicken overnight.
- Use a meat thermometer to check the internal temperature for food safety.
- Skin-on thighs ensure crispy skin and juicy meat.
- Pair with grilled vegetables or a fresh salad for a complete meal.
