  • 4 sandwich rolls
  • 4 slices cheddar cheese
  • 8 slices cooked bacon
  • 1 tomato, sliced
  • 4 pieces leafy lettuce
  • 1/4 cup mayonnaise
  • 1/4 cup mustard

Instructions

  1. Prepare the Chicken: Slice each chicken breast in half horizontally to create four thinner cutlets. Place each between two sheets of plastic wrap and pound to about 1/2 inch thickness for even cooking.
  2. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, thyme, oregano, salt, and pepper. Add the chicken to the bowl or a resealable bag, ensuring it’s well coated. Marinate in the fridge for at least 3 hours for maximum flavor.
  3. Grill the Chicken: Preheat grill to high and lightly oil the grates. Grill the chicken for 2–3 minutes on each side until fully cooked (internal temp should reach 165°F (75°C)). During the last minute, place a slice of cheddar on each piece to melt.
