  • 1 cup queso

  • ¼ cup chipotle sauce
  • 1 cup sour cream
  • Crisp red tortilla strips

Instructions

  1. Cook Ground Beef: In a large skillet over medium-high heat, add the ground beef and cook through until no longer pink, breaking it up and stirring frequently, about 6-7 minutes. Drain any excess fat from the skillet.
  2. Add Seasoning: Pour in the water and taco seasoning packet, stirring to combine. Let the mixture simmer on medium-high heat for another 3-4 minutes until flavors meld. Remove from heat and set aside.
  3. Assemble Burritos: Lay out the tortillas flat on a clean surface. Evenly layer each tortilla with seasoned ground beef, cooked seasoned or yellow rice, queso, shredded cheddar cheese, chipotle sauce, sour cream, and a handful of crisp red tortilla strips.
  4. Preheat Broiler: Set your oven broiler on high to preheat while you roll the burritos.
  5. Roll and Place Burritos: Roll each tortilla tightly so the edges overlap to enclose the filling. Place the burritos seam-side down into an oven-safe skillet to keep them closed. Sprinkle additional shredded cheddar cheese on top of each burrito.
  6. Broil to Melt Cheese: Place the skillet under the preheated broiler for 1-2 minutes, just until the cheese melts and starts to bubble slightly. Watch carefully to avoid burning.
