  • 1 large yellow onion, thinly sliced
  • 4 to 6 garlic cloves, minced
  • ¾ teaspoon sweet or smoked paprika, to taste
  • 1 pound fresh green beans, trimmed

For the Tomato Sauce:

  • 14.5 ounces canned diced tomatoes, undrained
  • ¾ teaspoon salt, to taste
  • ¼ teaspoon fresh ground black pepper, to taste
  • ¼ cup vegetable broth

Instructions

  1. Cook the aromatics: Melt butter in a Dutch oven or large saucepan over medium heat. Add onions and cook until soft, about 3 minutes. Add garlic and cook until fragrant, around 20 seconds. Stir in paprika.
  2. Add the vegetables and broth: Stir in green beans, diced tomatoes, salt, and pepper. Add vegetable broth, stir, and bring to a boil.
  3. Cook: Reduce heat to LOW, cover, and cook for about 1 hour until green beans are tender.
  4. Season and serve: Adjust seasonings to taste and serve hot.
