Instructions

  1. Prepare the cucumber slices: Chop the ends off of the cucumber and use a mandolin or vegetable peeler to slice it lengthwise into thin strips. Lay the slices on a few layers of paper towels, cover with more paper towels, and pat dry. Let them sit to remove excess moisture while you prepare the tzatziki sauce.
  2. Make the tzatziki sauce: In a small bowl, combine the plain Greek yogurt, freshly squeezed lemon juice, minced garlic clove, fresh dill, salt, and ground black pepper. Mix thoroughly until smooth and well blended.
  3. Assemble the sushi rolls: Spread a thin layer of tzatziki sauce onto each cucumber slice. Top with thin strips of bell pepper, diced red onion, and crumbled feta cheese. Carefully roll each cucumber slice up and secure it with a toothpick to hold its shape.

  • You can adjust the amount of garlic and dill in the tzatziki to suit your taste preferences.
