Ingredients
Scale
Noodles and Lobster
- 12 ounces linguine or other thin noodles
- 2 lobsters (1 1/2 pounds each) or 12 to 16 ounces cooked lobster meat
Sauce and Seasonings
- 4 tablespoons salted butter
- 8 ounces button mushrooms, thickly sliced
- 8 garlic cloves, minced
- 1 bunch green onions, thinly sliced and divided
- 5 tablespoons oyster sauce
- 2 tablespoons light brown sugar
- 1 tablespoon reduced sodium soy sauce
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon red pepper flakes
Instructions
- Cook the Noodles: Bring a large pot of water to a boil and cook the linguine according to the package directions until al dente. Drain well and set aside.
- Prepare the Lobster: If using live lobsters, add about 3 inches of water to a large stock pot and bring to a vigorous boil. Place the lobsters in the pot, cover, and steam for 11-12 minutes until cooked. Remove lobsters with tongs and let cool slightly. Extract the meat from the shells and cut into large pieces. Set aside.
- Sauté Mushrooms: In a large sauté pan or wok over medium heat, melt the salted butter. Add the sliced mushrooms and cook for 3-4 minutes until they start to brown on the edges.
- Add Garlic and Green Onions: Stir in the minced garlic and half of the sliced green onions. Continue sautéing for 1-2 minutes until fragrant.
- Create the Sauce: Reduce the heat to low, then add the oyster sauce, brown sugar, reduced sodium soy sauce, toasted sesame oil, and red pepper flakes. Stir well to combine all the flavors.
- Toss Noodles with Sauce: Add the cooked noodles and remaining green onions to the pan. Toss everything thoroughly to coat the noodles evenly with the sauce.
- Incorporate Lobster: Gently add the cooked lobster meat to the noodles, folding carefully to mix without breaking up the lobster pieces.
- Serve: Serve the garlic lobster noodles warm or chilled, according to your preference.
Notes
- Use fresh lobster for best flavor, but cooked lobster meat can be a convenient substitute.
- Adjust the red pepper flakes to your spice tolerance; omit if you prefer no heat.
- Button mushrooms can be substituted with cremini or shiitake mushrooms for a deeper flavor.
- To make this dish gluten-free, substitute soy sauce with tamari and use gluten-free noodles.
- Leftover noodles can be stored in an airtight container in the fridge for up to 2 days.
