Noodles and Vegetables

  • 250g medium egg noodles
  • 1 tbsp sesame oil, plus extra to serve (optional)
  • 1 tbsp groundnut oil
  • Bunch spring onions, thinly sliced lengthways
  • 300g bag beansprouts

Garlic Chilli Prawns

  • 4 garlic cloves, finely chopped
  • 1 red chilli, finely chopped
  • 400g raw peeled tiger prawns
  • 1 tbsp soft brown sugar
  • 1 tbsp dark soy sauce

Instructions

  1. Cook the Noodles: Boil the egg noodles according to the package instructions, then rinse them with cold water to stop the cooking process. Drain well and toss the noodles with 1 teaspoon of sesame oil to prevent sticking.
  2. Stir-Fry Vegetables: Heat 2 teaspoons of groundnut oil in a non-stick wok over medium-high heat. Add most of the spring onions and all the beansprouts, stir-frying for a couple of minutes until they become tender but still crisp. Add the noodles and warm through while stirring. Mix in the remaining sesame oil, then transfer the noodle and vegetable mixture onto a serving dish.
  3. Prepare the Prawns: Wipe out the wok carefully to remove any residue and add the remaining groundnut oil. Toss in the finely chopped garlic and red chilli; cook for about 10 seconds until fragrant.
  4. Cook the Prawns: Add the raw peeled tiger prawns to the wok and stir-fry for 2 to 3 minutes until they just turn pink, indicating they are cooked through.
  5. Season the Prawns: Stir in the soft brown sugar and dark soy sauce, letting the mixture bubble and the sugar melt, coating the prawns in a flavorful sauce.
  6. Assemble the Dish: Spoon the cooked prawns on top of the warm sesame noodles and vegetables. Sprinkle with the remaining spring onions for fresh crunch. Drizzle with extra sesame oil if desired before serving.
