Description

Garlic Beef Ramen Stir Fry is a quick and flavorful meal combining tender ground beef with fresh vegetables and ramen noodles tossed in a savory garlic-ginger soy sauce. This stir fry offers a perfect balance of umami and a hint of heat, making it a satisfying dish for busy weeknights.

Ingredients

Scale

Beef and Noodles

  • 1 pound lean ground beef
  • 6 ounces ramen noodles (seasoning packets discarded, 2 packages)

Vegetables

  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 pound broccoli, cut into florets
  • 1 cup shredded carrots

Sauce

  • 1/3 cup soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons sriracha (optional)
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Additional Ingredients

  • 1 tablespoon sesame oil
  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Cook Ramen Noodles: In a medium saucepan, bring water to a boil. Add ramen noodles and cook until tender, about 2 minutes. Drain the noodles and set aside.
  2. Prepare Sauce: In a bowl, whisk together soy sauce, brown sugar, sriracha, minced garlic, and minced ginger. In a separate small bowl, combine cornstarch and water to form a slurry, then whisk this slurry into the sauce to thicken it.
  3. Cook Ground Beef: Heat a large skillet over medium heat. Add the ground beef, breaking it apart as it cooks until fully browned. Drain any excess grease, remove the beef from the skillet, and set aside.
  4. Sauté Vegetables: In the same skillet, heat sesame oil. Add chopped onions, red bell pepper, shredded carrots, and broccoli florets. Cook, stirring occasionally, until the vegetables are tender, about 6 to 8 minutes.
  5. Combine and Finish Stir Fry: Return the cooked ground beef to the skillet with the vegetables. Add the drained ramen noodles. Pour the prepared sauce over the skillet contents and toss everything together until well combined and heated through.
  6. Garnish and Serve: Sprinkle sliced green onions and sesame seeds on top before serving for added flavor and texture.

Notes

  • Discard the ramen seasoning packets to control sodium levels and customize the sauce flavor.
  • Sriracha is optional – adjust the amount based on desired spice level.
  • Vegetables can be swapped or added according to preference, such as snap peas or mushrooms.
  • For a gluten-free version, use gluten-free soy sauce.
  • Cooking vegetables just until tender helps retain their crunch and nutrients.
  • Use lean ground beef to reduce fat content and drain grease to keep the dish lighter.
