Instructions
- Prepare the Pickled Red Onions: Slice the red onion and place it in a heat-safe jar.
- Make Pickling Liquid: In a medium saucepan over medium heat, combine water, honey, and fine salt, stirring until dissolved.
- Add Vinegar and Pour: Stir in the distilled white vinegar, then pour the hot pickling liquid over the red onions in the jar.
- Pickle the Onions: Allow the jar to cool to room temperature, cover it, and refrigerate for at least 12 hours or until the onions turn bright pink.

- Assemble Endive Cups: Fill the lower half of each endive leaf with approximately 1 1/2 teaspoons of the whipped goat cheese.
- Add Smoked Trout: Place a small piece of smoked trout on top of the whipped goat cheese in each endive.
- Garnish: Top each endive with a slice of the pickled red onion and fresh dill sprigs according to taste.
