Baked Fried Rice Base
- 1 1/2 cups long grain white rice, uncooked
- 2 cups low sodium chicken or vegetable stock
- 1 1/2 tbsp light soy sauce
- 1 tbsp Chinese cooking wine (dry sherry, mirin, or sake)
- 2 garlic cloves, minced with crusher (straight into pan)
- 2 cups frozen diced vegetables (carrots, peas, and corn mix)
- 1/4 tsp white pepper
Topping and Garnish
- 1 1/4 cups (180g) uncooked chopped bacon or ham
- 1 tbsp sesame oil
- 1/2 cup green onion, finely sliced (2–3 stems)
Instructions
- Preheat Oven: Set your oven to 200°C / 390°F (180°C fan) to prepare for baking the rice.
- Mix Ingredients: In a baking dish approximately 22 x 32 cm (9 x 13 inches), combine the uncooked rice, chicken or vegetable stock, light soy sauce, Chinese cooking wine, minced garlic, frozen diced vegetables, and white pepper. Stir until all ingredients are evenly distributed. Spread the rice mixture evenly across the dish.
- Add Bacon: Evenly scatter the uncooked chopped bacon or ham over the surface of the rice mixture.
- Bake Covered: Cover the baking dish tightly with foil to trap steam and bake in the preheated oven for 40 minutes, allowing the rice to cook in the liquid and steam.
- Bake Uncovered: Remove the foil and continue baking uncovered for an additional 15 minutes. This step crisps and colors the bacon while the liquid is absorbed and the rice finishes cooking.
- Rest: Take the dish out of the oven and cover it loosely with foil. Let it stand for 10 minutes to allow the rice to absorb any remaining moisture and flavors to settle.
- Fluff and Serve: Add the finely sliced green onions and drizzle the sesame oil over the rice. Fluff the rice gently with a fork to separate the grains and evenly distribute the flavors. Serve hot and enjoy your perfectly baked fried rice!

- Use long grain white rice for the best texture; rinsing the rice is optional but not required.
- Light soy sauce provides saltiness without overpowering; adjust to taste if needed.
