- Drop of vanilla extract
- 1 tbsp milk

- Prepare the Dough: Beat the softened butter together with golden caster sugar and icing sugar in a large bowl using an electric whisk until creamy and smooth. Incorporate the egg yolks and vanilla extract and whisk again to combine thoroughly.
- Mix Dry Ingredients: Add plain flour, custard powder, grated nutmeg, ground cinnamon, and a pinch of salt to the wet mixture. Mix until the ingredients clump together forming a firm dough.
- Shape Cookies: Break off small pieces of dough approximately 10g each and roll into cherry-sized balls. Place them on a baking tray lined with baking parchment and gently flatten each ball slightly using a fork for a classic look.
- Chill the Dough: Refrigerate the shaped cookies for at least 30 minutes to allow the dough to firm up, or up to one day. Cookies can be frozen at this stage for up to two months.
- Bake Cookies: Preheat the oven to 180°C (160°C fan)/Gas mark 4. Bake the chilled cookies for 12 to 15 minutes until they turn golden and are firm to the touch. Remove from oven and cool completely on a wire rack.
- Prepare the Filling: Beat softened butter with sifted icing sugar, custard powder, vanilla extract, and milk with an electric whisk until the mixture is smooth and creamy.
- Assemble Cookie Kisses: Spoon the filling into a piping bag fitted with a large round nozzle and pipe a dot of filling onto the flat side of half the cookies. Place plain cookies on top to sandwich them together.
