Instructions
- Preheat Oven: Preheat your oven to 400 degrees F (200 degrees C) to ensure it’s hot and ready for baking the eggs.
- Heat Pan: Place a non-stick oven-proof frying pan over medium heat to prepare for sautéing the vegetables.
- Sauté Onions and Garlic: Add the olive oil and chopped onion to the heated pan. Fry for a few minutes until the onions are softened and starting to turn golden. Add the minced garlic and stir constantly for 1-2 minutes to release its aroma without burning.
- Add Spices and Chili: Stir in the sliced red chili pepper, harissa paste, and smoked paprika. Cook the mixture for about 5 minutes until the chili softens and the spices become fragrant.
- Simmer Tomatoes: Pour in the diced tomatoes and mix well. Let the sauce simmer gently for 5-10 minutes until it thickens to a rich, chunky consistency. Season the sauce with salt to taste.
- Add Eggs: Either leave the sauce in the oven-proof pan and crack the two eggs directly over it or divide the sauce into two separate oven-proof dishes or small cast iron pans and crack one egg into each.
- Bake Eggs: Place the pan(s) in the center of the preheated oven and bake for 6-8 minutes, or until the eggs reach your preferred doneness with set whites and slightly runny yolks.
- Garnish and Serve: Remove from oven and sprinkle with chopped fresh parsley. Serve immediately, ideally with crusty bread to scoop up the delicious sauce and eggs.
