  • Author: Jack

  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

This Easy Spicy Baked Eggs recipe combines the rich flavors of harissa-spiced tomato sauce with perfectly baked eggs. It’s a quick, flavorful dish that’s perfect for breakfast, brunch, or a light meal. The eggs gently bake in a savory, spicy tomato base, garnished with fresh parsley and served best with crusty bread for dipping.

Ingredients

Scale

Sauce Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Chili Pepper, sliced
  • 2 tablespoons Harissa Paste
  • 1/2 teaspoon Smoked Paprika
  • 1 can (14 oz) Diced Tomatoes
  • Salt, to taste

Eggs & Garnish

  • 2 Eggs
  • Fresh Parsley, chopped, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (200 degrees C) to ensure it’s hot and ready for baking the eggs.
  2. Heat Pan: Place a non-stick oven-proof frying pan over medium heat to prepare for sautéing the vegetables.
  3. Sauté Onions and Garlic: Add the olive oil and chopped onion to the heated pan. Fry for a few minutes until the onions are softened and starting to turn golden. Add the minced garlic and stir constantly for 1-2 minutes to release its aroma without burning.
  4. Add Spices and Chili: Stir in the sliced red chili pepper, harissa paste, and smoked paprika. Cook the mixture for about 5 minutes until the chili softens and the spices become fragrant.
  5. Simmer Tomatoes: Pour in the diced tomatoes and mix well. Let the sauce simmer gently for 5-10 minutes until it thickens to a rich, chunky consistency. Season the sauce with salt to taste.
  6. Add Eggs: Either leave the sauce in the oven-proof pan and crack the two eggs directly over it or divide the sauce into two separate oven-proof dishes or small cast iron pans and crack one egg into each.
  7. Bake Eggs: Place the pan(s) in the center of the preheated oven and bake for 6-8 minutes, or until the eggs reach your preferred doneness with set whites and slightly runny yolks.
  8. Garnish and Serve: Remove from oven and sprinkle with chopped fresh parsley. Serve immediately, ideally with crusty bread to scoop up the delicious sauce and eggs.

Notes

  • If you prefer less heat, reduce the amount of chili pepper or harissa paste.
  • For a creamier texture, you can add a dollop of yogurt or crumbled feta before baking.
  • Use a well-seasoned cast iron pan if available for added flavor and even heat distribution.
  • Make sure your frying pan is oven-proof to avoid damage.
  • Adjust baking time depending on how runny or firm you like your egg yolks.
