Salmon Feta Mixture:
- 1 salmon fillet
- 1 cup feta cheese
- 1 ½ cups cherry tomatoes (or more if desired)
- 1 tsp salt
- ½ tsp fresh black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 3 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Pasta:
- 250 g penne pasta, cooked al dente
Instructions
- Prep and Bake: Preheat the oven to 400°F (200°C). In a greased baking dish, combine salmon, feta, and cherry tomatoes. Season with salt, pepper, and olive oil. Bake for 15–20 minutes until the salmon is flaky and tomatoes are bursting.
- Mix It Up: Mash salmon, feta, and tomatoes together. Stir in spices, olive oil, and parsley until creamy and well combined.
- Toss with Pasta: Add cooked penne, toss to coat in the sauce. Season with salt and pepper. Add more olive oil if desired.
