Kielbasa
- 2 rings kielbasa, cut into 1” size pieces

- ¼ cup mayonnaise
- 3 tablespoons whole grain Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon chives, finely chopped (plus more for serving)
Instructions
- Prepare Kielbasa: Cut the kielbasa into 1” pieces, then make one or two shallow scores in the middle of each piece, being careful not to cut all the way through. Place the pieces in a mixing bowl.
- Mix Seasoning: In a small bowl, combine the stone ground mustard, light brown sugar, and Worcestershire sauce. Toss this mixture with the kielbasa pieces ensuring they are well coated.
- Arrange in Air Fryer: Place the kielbasa pieces evenly in the air fryer basket without overcrowding to allow proper air circulation.
- Air Fry: Cook at 400°F for 9-11 minutes or until the kielbasa is browned and crispy, shaking the basket halfway through cooking to ensure even crisping.
- Remove and Repeat: Carefully remove the cooked kielbasa from the air fryer and transfer to a large serving platter. If necessary, cook remaining pieces in a second batch following the same steps.
- Prepare Sauce: In a bowl, mix together mayonnaise, whole grain Dijon mustard, Worcestershire sauce, and finely chopped chives until smooth and well combined.
- Serve: Serve the crispy kielbasa bites with the creamy mustard sauce on the side, garnished with additional chopped chives for a fresh touch.

- For even crispier kielbasa, consider spraying a light layer of cooking oil before air frying.
- If you don’t have an air fryer, you can bake the kielbasa at 400°F on a baking sheet for 15-20 minutes, flipping halfway.
