Perfect for snacking or lunchboxes, these bars offer a delightful mix of textures and flavors with natural sweeteners and wholesome ingredients.

Ingredients

Scale

Oat Base

  • 2 cups rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • Pinch salt

Gummies

  • 1 cup 100% fruit juice (apple, berry, or orange)
  • 2 tablespoons unflavored gelatin
  • 2 to 3 tablespoons honey or agave syrup

Toppings

  • 1 cup freeze-dried fruit (such as strawberries or raspberries), lightly crushed
  • 1 cup freeze-dried candy (such as Skittles or marshmallows), crushed or chopped

Instructions

  1. Prepare Baking Pan: Line an 8×8-inch baking pan with parchment paper, making sure the paper covers all sides for easy removal later.
  2. Mix Oat Base: In a large bowl, combine the rolled oats, almond or peanut butter, honey or maple syrup, melted butter, vanilla extract, and a pinch of salt. Stir thoroughly until all ingredients are well integrated. Press the mixture evenly into the prepared pan and chill in the refrigerator while preparing the gummies.
  3. Make Gummies: Pour the fruit juice into a small saucepan and sprinkle the gelatin evenly over the surface. Let it absorb for 5 minutes. Warm the mixture gently over low heat, stirring constantly until the gelatin dissolves completely. Remove from heat and blend in the honey or agave syrup. Pour the mixture into a parchment-lined small dish and refrigerate for 45 to 60 minutes until firmly set.
  4. Cut Gummies: Once the gelled gummies have set, cut them into small, uniform cubes.
  5. Assemble Snack Bars: Remove the oat base from the fridge. Evenly distribute the gummy cubes, lightly crushed freeze-dried fruit, and crushed or chopped freeze-dried candy over the base. Gently press the toppings to secure them.
  6. Final Chill: Return the assembled pan to the refrigerator for 10 to 15 minutes to ensure the bars set firmly.
  7. Portion and Serve: Use the parchment paper to lift the entire slab from the pan. Cut into 12 equal bars using a sharp knife and serve immediately or store refrigerated.

Notes

  • Use parchment paper to make removal easier and to avoid sticking.
  • Adjust sweetness by varying the amount of honey or maple syrup used.
  • Freeze-dried candies like Skittles add a fun, colorful twist but can be substituted with any preferred dried sweets.
  • Store bars in an airtight container in the refrigerator for up to one week.
  • Gelatin can be substituted with agar-agar for a vegetarian version, but set time and texture may vary.
