For the Cucumber Gimlet:

  • 4 slices peeled cucumber (1/2-inch thick slices)
  • 1/2 ounce simple syrup
  • 1/2 ounce fresh lime juice
  • 8 leaves fresh mint
  • 2 ounces gin (preferably Hendrick’s)
  • Ice
  • Cucumber ribbon (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Muddle the Ingredients: To a cocktail shaker, add the cucumber slices, simple syrup, lime juice, and mint leaves. Muddle until the cucumber has completely broken up and released all its juice.
  2. Shake with Gin: Fill the cocktail shaker with ice and pour in the gin. Shake vigorously until the outside of the shaker feels very cold.
  3. Strain and Garnish: Strain the cocktail into a chilled glass. Add the cucumber ribbon and mint leaves for garnish.
  4. Serve: Serve immediately and enjoy!
