Description

These refreshing cucumber and herb triple-decker sandwiches combine soft cheese infused with mint and chives, layered with thin cucumber slices on wholemeal bread. Perfectly trimmed and cut into bite-sized squares, they make an elegant and light snack or party treat.

  • 1 small cucumber, thinly sliced
  • 9 thin slices wholemeal bread
  • 200g tub soft cheese

Herb Mixture

  • ½ small bunch mint, finely chopped
  • small bunch chives, snipped

Instructions

  1. Prepare the cucumber: Lay the cucumber slices on kitchen paper to absorb excess moisture and prevent soggy sandwiches.
  2. Make the cheese mixture: Whizz the soft cheese, mint, and a pinch of seasoning in a small food processor or use a hand blender until well combined. Stir in most of the snipped chives, reserving some for garnish.
  3. Assemble the first layer: Spread the cheese and herb mixture over 6 slices of wholemeal bread. Arrange the cucumber slices, reserving 12 for decoration, evenly over the cheese-covered bread.
  4. Layer the sandwiches: Place two slices of cucumber-topped bread on top of each other, then add a plain slice of bread on top. Repeat this layering process twice more to create triple-deckers.
  5. Trim and cut: Use a sharp knife to carefully trim off the crusts from the triple-decker sandwiches, then cut each sandwich into 4 equal squares for bite-sized servings.
  6. Garnish and serve: Top each mini sandwich square with a reserved cucumber slice and sprinkle with the remaining chives for a fresh finish.

  • Drying the cucumber slices on kitchen paper helps prevent soggy bread.
  • Use a sharp serrated knife for cleanly trimming the crusts and cutting the sandwiches.
