Instructions
- Preheat Oven & Prepare Pans: Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper to prevent sticking and promote even browning.
- Prepare Potatoes: Wash and thoroughly dry the baby potatoes, then cut them into halves. In a large mixing bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and black pepper until evenly coated.
- Initial Potato Roast: Spread the seasoned potatoes in a single layer across the two prepared baking sheets, ensuring space between each piece for crispiness. Place both sheets into the preheated oven and roast for 20 minutes.
- Cook Beef Bacon: While the potatoes roast, cook the chopped beef bacon in a large skillet over medium heat. Cook slowly, turning frequently, until the bacon is golden brown and crisp. Remove with a slotted spoon and drain on paper towels. Reserve 1 tablespoon of rendered bacon fat or substitute with the remaining 1 tablespoon olive oil for the glaze.
- Continue Potato Roasting: Remove the potatoes after 20 minutes. Use a spatula to flip and toss them to ensure even browning. Return to the oven for another 15-20 minutes until tender inside and golden-crispy outside.
- Craft the Honey-Garlic Glaze: In a small bowl or saucepan, combine honey, garlic powder, smoked paprika, and reserved bacon fat or olive oil. Whisk or gently warm over low heat until smooth, well combined, and fragrant.
- Combine & Final Bake: Remove the potatoes from the oven, drizzle the warm glaze evenly over them, and add the crispy bacon crumbles. Gently toss to coat thoroughly. Return to the oven for 5-7 minutes to allow the glaze to caramelize and set.
- Serve: Remove the baking sheets carefully from the oven. Transfer the potatoes to a serving platter and sprinkle with fresh chopped parsley if desired. Serve immediately while warm and crispy.
