Instructions

  1. Preheat Oven & Prepare Pans: Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper to prevent sticking and promote even browning.
  2. Prepare Potatoes: Wash and thoroughly dry the baby potatoes, then cut them into halves. In a large mixing bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and black pepper until evenly coated.
  3. Initial Potato Roast: Spread the seasoned potatoes in a single layer across the two prepared baking sheets, ensuring space between each piece for crispiness. Place both sheets into the preheated oven and roast for 20 minutes.
  4. Cook Beef Bacon: While the potatoes roast, cook the chopped beef bacon in a large skillet over medium heat. Cook slowly, turning frequently, until the bacon is golden brown and crisp. Remove with a slotted spoon and drain on paper towels. Reserve 1 tablespoon of rendered bacon fat or substitute with the remaining 1 tablespoon olive oil for the glaze.
  5. Continue Potato Roasting: Remove the potatoes after 20 minutes. Use a spatula to flip and toss them to ensure even browning. Return to the oven for another 15-20 minutes until tender inside and golden-crispy outside.
  6. Craft the Honey-Garlic Glaze: In a small bowl or saucepan, combine honey, garlic powder, smoked paprika, and reserved bacon fat or olive oil. Whisk or gently warm over low heat until smooth, well combined, and fragrant.
  7. Combine & Final Bake: Remove the potatoes from the oven, drizzle the warm glaze evenly over them, and add the crispy bacon crumbles. Gently toss to coat thoroughly. Return to the oven for 5-7 minutes to allow the glaze to caramelize and set.
