Instructions
- Boil and prepare eggs: Place eggs in boiling water and cook for 10–12 minutes until hard-boiled. Transfer them to an ice bath to cool, then peel and chop into small pieces.
- Mix salad ingredients: In a large bowl, combine the drained tuna, chopped hard-boiled eggs, chopped cucumber, finely diced red onion, sweet corn if using, and chopped fresh parsley.
- Prepare dressing: In a smaller bowl, whisk together the mayonnaise (or Greek yogurt), fresh lemon juice, salt, and freshly ground black pepper until smooth.
