For the Pasta:
- 12 oz fettuccine (or your favorite pasta)
For the Shrimp and Broccoli:
- 1 lb large shrimp, peeled & deveined
- 2 cups broccoli florets
- 2 tablespoons olive oil or butter
- 4 cloves garlic, minced
For the Sauce:
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Add broccoli in the last few minutes of cooking. Drain pasta and broccoli, reserving 1/2 cup of pasta water.
- Sear the Shrimp: In a skillet, cook shrimp in olive oil or butter until pink and opaque. Remove from skillet and set aside.
- Make the Sauce: In the same skillet, sauté garlic, then add heavy cream. Simmer for a few minutes, whisk in Parmesan cheese until creamy. Season with salt, pepper, and red pepper flakes.
- Combine and Serve: Add pasta, broccoli, and shrimp to the skillet. Toss to coat in the sauce. Adjust consistency with reserved pasta water if needed. Garnish with parsley and extra Parmesan before serving.
