Description

Cowboy caviar is a vibrant and flavorful no-cook salad featuring black beans, sweetcorn, fresh vegetables, and a zesty lime dressing. Perfect as a light snack or party dip, it’s easy to prepare and pairs wonderfully with tortilla chips.

  • 400g can black beans, drained and rinsed
  • 200g can sweetcorn, drained, or use frozen (defrosted if frozen)
  • 2 large tomatoes, quartered, deseeded and finely chopped
  • 1 small red onion, finely chopped
  • 1 pepper (any colour), deseeded and finely chopped
  • 1 large avocado, halved, peeled, stoned and finely chopped (optional)
  • small bunch of coriander, chopped (optional)

Dressing

  • 3 tbsp olive oil
  • 1 lime, juiced, or 2 tbsp red wine vinegar

To Serve

  • Tortilla chips, to serve (gluten-free, if needed)

Instructions

  1. Prepare the salad base: Tip the drained and rinsed black beans, drained sweetcorn, quartered and chopped tomatoes, finely chopped red onion, finely chopped pepper, and if using, avocado and coriander into a large bowl.
  2. Add dressing: Drizzle over the olive oil and lime juice (or red wine vinegar) to the bowl with the vegetables and beans. Gently stir everything together to combine the flavors thoroughly.
  3. Season and serve: Season the mixture with salt and pepper to taste. If not serving immediately, omit the avocado and coriander until just before serving to keep the salad fresh.
  4. Storage: The salad will keep at room temperature for up to two hours, or can be chilled overnight without avocado and coriander. Add these fresh just before serving.
  5. Serve: Serve the cowboy caviar alongside tortilla chips for scooping and enjoy as a refreshing dip or side dish.

Notes

  • For best texture and flavor, add avocado and coriander just before serving to prevent browning and wilting.
  • This recipe is naturally gluten-free when served with gluten-free tortilla chips.
  • You can use either lime juice or red wine vinegar depending on your preference for acidity.
  • Keep the salad refrigerated if storing overnight, adding fresh ingredients later preserves freshness.
