Ingredients

  • 2 medium carrots (about 100g), cut into thick slices
  • 2 small parsnips (about 80g), peeled, woody cores removed and cut into chunks
  • 1 red onion, cut into wedges
  • 2 tsp olive oil
  • 16 chipolata-sized pigs in blankets or 8 larger ones
  • 39g sachet Colman’s Sausage Casserole Mix
  • 2 tsp wine or cider vinegar
  • 2-3 tbsp cream or crème fraîche (optional)
  • 2 tbsp chopped soft herbs, such as basil or parsley
  • Mashed potato or leftover roasties, to serve

Instructions

  1. Step 1: Heat the oven to 220°C/200°C fan/gas 7. Place the carrots, parsnips, and onion in a deep baking dish or casserole and toss with the olive oil. Season well and roast for 20 minutes.
  2. Step 2: Add the pigs in blankets to the dish and roast for a further 10-15 minutes, until the bacon starts to crisp.
  3. Step 3: Reduce the oven temperature to 200°C/180°C fan/gas 6. In a jug, mix the sachet of Colman’s Sausage Casserole Mix with 300ml water. Pour this mixture and the vinegar into the baking dish.
  4. Step 4: Return the dish to the oven and cook for another 40 minutes. Adjust seasoning to taste.
  5. Step 5: If using, swirl through the cream or crème fraîche and sprinkle over the chopped soft herbs. Serve hot with mashed potatoes or leftover roasties.

Tips & Variations

  • If your pigs in blankets are already cooked, add them with the Colman’s Sausage Casserole mix instead of roasting them with the vegetables.
  • To use leftover roast potatoes, place them on a baking tray and lightly crush them with the back of a fork to split. Heat them in the oven alongside the casserole for 40 minutes for a crispy side.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave until piping hot. For best texture, reheat uncovered in the oven to keep the bacon crisp.

  • 2 tsp wine or cider vinegar

Optional Additions

  • 23 tbsp cream or crème fraîche
  • 2 tbsp chopped soft herbs, such as basil or parsley

To Serve

  • Mashed potato or leftover roasties (see tip)

Instructions

  1. Preheat and roast vegetables: Heat the oven to 220C/200C fan/gas 7. Place the carrots, parsnips, and red onion in a deep baking dish or casserole dish. Toss them well with 2 tsp olive oil and season generously with salt and pepper. Roast for 20 minutes to soften and caramelize the vegetables.
  2. Add pigs in blankets and continue roasting: Arrange the pigs in blankets on top of the roasted vegetables in the dish. Return to the oven and roast for another 10-15 minutes until the bacon begins to crisp but is not yet fully cooked.
  3. Prepare sausage casserole mix: Reduce the oven temperature to 200C/180C fan/gas 6. In a jug, mix the 39g sachet of Colman’s Sausage Casserole Mix with 300ml of water until smooth.
  4. Add casserole mix and vinegar: Pour the prepared sausage casserole mix and 2 tsp of wine or cider vinegar into the baking dish with the roasted ingredients. Stir gently to combine the flavors and distribute the sauce evenly over the pigs in blankets and vegetables.
  5. Bake to finish: Place the dish back in the oven and cook for 40 minutes, allowing the sauce to thicken and the ingredients to meld together. Check seasoning and adjust if needed.
  6. Optional finishing touches: If desired, swirl 2-3 tbsp cream or crème fraîche through the casserole to add richness. Scatter 2 tbsp chopped soft herbs such as basil or parsley over the top to bring freshness and color.
  7. Serve: Serve the casserole hot with creamy mashed potatoes or lightly crushed leftover roasties, warmed in the oven alongside the casserole for 40 minutes if using.

Notes

  • If you have leftover cooked pigs in blankets, add them along with the Colman’s Sausage Casserole Mix instead of roasting them earlier in the process.
  • To refresh leftover roast potatoes for serving, place them on a baking tray, lightly crush them with the back of a fork to split, then heat in the oven alongside the casserole for 40 minutes.
