- 1½ pounds skin-on boneless chicken thighs (excess skin trimmed)

- ½ teaspoon ground turmeric
- ½ teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
For the Sour Cream Drizzle:
- ¾ cup sour cream
- 1 teaspoon lemon juice
- ½ teaspoon granulated sugar
- ½ teaspoon za’atar
- ½ teaspoon garlic powder
- 3–4 tablespoons milk (enough to thin the sour cream)
For the Rice:
- 2 tablespoons unsalted butter
- 2 cups long grain white rice
- 2 teaspoons ground turmeric
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- 4 cups vegetable or chicken broth
For Serving:
- 1 cup shredded iceberg lettuce
- 1 ½ cups fresh diced tomato
- ½ cup diced peeled cucumber
Instructions
- Cook the Chicken – In a bowl, combine chicken thighs, olive oil, garlic, and spices. Chill for 1 hour. Bake or air fry until cooked through. Slice.
- Make the Rice – Melt butter in a pot. Add rice and remaining ingredients. Cook until fluffy.
- Make the Sour Cream Drizzle – Mix sour cream sauce ingredients in a bowl.
- To Serve – Layer rice, chicken, and toppings in bowls. Drizzle with sour cream sauce. Serve with pita or naan bread.
