Instructions

  1. Marinate the Chicken: In a medium bowl, mix chicken pieces with cornstarch, 1 tbsp soy sauce, 1 tsp sesame oil, ground ginger, and black pepper. Combine thoroughly and let it marinate for at least 15 minutes for best flavor absorption.
  2. Prepare the Noodles: Cook the dried lo mein noodles according to package instructions. Once cooked, drain well and rinse under cold water to stop cooking. Set aside.
  3. Cook the Chicken: Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes until fully cooked and lightly browned. Remove the chicken from the wok and set aside.
  4. Sauté Aromatics: Add the remaining 1 tbsp vegetable oil to the wok. Add the sliced onion and minced garlic, stir-fry for about 1 minute until they release their fragrant aroma.
  5. Cook Vegetables: Add the red bell pepper slices, broccoli florets, and sliced carrots to the wok. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
  6. Make the Sauce: In a small bowl, whisk together chicken broth, 1/2 cup soy sauce, oyster sauce if using, rice vinegar, brown sugar, 1 tsp sesame oil, and red pepper flakes if desired.
  7. Combine Chicken and Vegetables: Return the cooked chicken to the wok with the vegetables. Pour the prepared sauce over them and let it simmer for 1-2 minutes until the sauce thickens slightly and coats everything nicely.
  8. Add Noodles: Add the cooked noodles to the wok and toss gently to combine and evenly coat the noodles with the sauce, chicken, and vegetables.
  9. Adjust Seasoning: Taste the lo mein and adjust seasoning if necessary, adding more soy sauce or pepper to suit your preference.
  10. Serve: Serve the chicken lo mein immediately, garnished with sliced green onions and a sprinkle of sesame seeds if desired.
