- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp ground ginger
- 1/4 tsp black pepper
Vegetables and Aromatics
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
Noodles and Sauce
- 1 (16 oz) package dried lo mein noodles
- 1 cup chicken broth
- 1/2 cup soy sauce
- 1/4 cup oyster sauce (optional)
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp vegetable oil
Garnishes
- 2 green onions, thinly sliced
- Sesame seeds (optional)
Instructions
- Marinate the Chicken: In a medium bowl, mix chicken pieces with cornstarch, 1 tbsp soy sauce, 1 tsp sesame oil, ground ginger, and black pepper. Combine thoroughly and let it marinate for at least 15 minutes for best flavor absorption.
- Prepare the Noodles: Cook the dried lo mein noodles according to package instructions. Once cooked, drain well and rinse under cold water to stop cooking. Set aside.
- Cook the Chicken: Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes until fully cooked and lightly browned. Remove the chicken from the wok and set aside.
- Sauté Aromatics: Add the remaining 1 tbsp vegetable oil to the wok. Add the sliced onion and minced garlic, stir-fry for about 1 minute until they release their fragrant aroma.
- Cook Vegetables: Add the red bell pepper slices, broccoli florets, and sliced carrots to the wok. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
- Make the Sauce: In a small bowl, whisk together chicken broth, 1/2 cup soy sauce, oyster sauce if using, rice vinegar, brown sugar, 1 tsp sesame oil, and red pepper flakes if desired.
- Combine Chicken and Vegetables: Return the cooked chicken to the wok with the vegetables. Pour the prepared sauce over them and let it simmer for 1-2 minutes until the sauce thickens slightly and coats everything nicely.
- Add Noodles: Add the cooked noodles to the wok and toss gently to combine and evenly coat the noodles with the sauce, chicken, and vegetables.
- Adjust Seasoning: Taste the lo mein and adjust seasoning if necessary, adding more soy sauce or pepper to suit your preference.
- Serve: Serve the chicken lo mein immediately, garnished with sliced green onions and a sprinkle of sesame seeds if desired.
Notes
- Marinating the chicken longer (up to 30 minutes) enhances flavor and tenderness.
- Oyster sauce is optional but adds a rich, savory depth to the dish.
- Use a wok or large skillet for best stir-fry results and even cooking.
- You can substitute lo mein noodles with spaghetti or linguine noodles if necessary.
- Adjust red pepper flakes to control the level of spiciness.
