- 1 lb. ground chicken or pork (chicken preferred)
- 1 inch piece ginger, grated
- 4 cloves garlic, grated
- 3 green onions, sliced (white and green parts)
- 1 zucchini, diced (optional)
- 1 carrot, diced (optional)
Grains
- 1/2 to 1 cup pre-cooked brown rice and/or quinoa
Wrap and Sauce
- 8–10 lettuce leaves (leaf lettuce, butter lettuce, or romaine)
- Spicy mayo (1/2 cup mayonnaise + 2-3 tablespoons sriracha)
- Juice of 5–6 limes (totaling 1/3 to 1/2 cup lime juice)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1–2 tablespoons brown sugar (adjust based on lime juice sweetness)
- 1/4 teaspoon grated garlic
- 1/4 teaspoon grated ginger
- Olive oil (for cooking, amount as needed)
Instructions
- Brown the Chicken: In a large skillet, heat a little olive oil over medium heat. Add the ground chicken and cook until fully browned and crumbled, making sure it is cooked through.
- Prepare Lime Drench: Set aside a small amount of grated garlic and ginger for the lime drench. In a jar, combine lime juice, soy sauce, sesame oil, brown sugar, the reserved garlic and ginger, and shake well to mix.
- Sauté Vegetables: To the skillet with chicken, add the remaining grated garlic and ginger, sliced green onions, diced zucchini, and diced carrot. Sauté for 5 to 10 minutes until vegetables are softened and fragrant. If the skillet is dry, add a drizzle of olive oil, soy sauce, or a bit of water to loosen any flavorful bits stuck to the pan.
- Add Grains: Stir in the pre-cooked brown rice and/or quinoa. Cook together until the mixture is warmed through and well combined. Taste and adjust seasoning as needed.
- Assemble Wraps: Spoon the chicken and vegetable filling into each lettuce leaf. Drizzle generously with the lime drench and finish with a dollop of spicy mayo on top. Serve immediately for the best fresh flavor.
Notes
- You can substitute ground pork for chicken if preferred.
- Adding both brown rice and quinoa boosts texture and nutrition, but either alone works well.
- The lime drench balances sweet, salty, and tangy flavors—adjust brown sugar based on the amount of lime juice used.
