Pie Dough:

- 3 cups peach slices, peeled and sliced, fresh or frozen
- ¾ cup light brown sugar
- ¼ cup tapioca starch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)
- ⅛ teaspoon salt
- 1 egg (beaten for egg wash)
Instructions
- Make the Pie Dough – In a food processor, combine flour, sugar, and salt. Pulse to mix. Add cold butter cubes and pulse until mixture resembles coarse meal. Drizzle in ice water, pulsing until dough clumps. Turn out, divide, wrap, and refrigerate.
- Prepare the Filling – Combine cherries and peaches in a bowl. Add sugar, tapioca starch, lemon juice, extracts, and salt. Toss gently and let sit to macerate.
- Assemble the Pie – Preheat oven. Roll out dough, fit into pie dish, pour in filling. Weave lattice pattern over top, brush with egg wash, and sprinkle with sugar.
- Bake the Pie – Place pie on baking sheet. Bake, then cool completely at room temperature.
