- 4 scones, halved
- 30 g salted butter, melted
- 20 g demerara sugar

Instructions
- Prepare the Nectarines: Heat your oven to 180°C (160°C fan) or gas mark 4. Cut the nectarines into wedges and place them in a 25cm square baking dish. Add the split vanilla pod, lemon juice, light brown sugar, ground cinnamon, and cornflour. Stir gently to combine.
- Roast the Fruit: Cover the baking dish with foil and roast in the preheated oven for 25-30 minutes. Halfway through cooking, turn the nectarines over to ensure even roasting. The fruit should become soft and fragrant.
- Add the Scone Topping: Remove the foil and arrange the halved scones on top of the roasted nectarines. Drizzle the melted butter evenly over the scones, then sprinkle with demerara sugar to add crunch and sweetness.
- Bake Until Golden: Return the dish to the oven and bake for an additional 10-15 minutes until the scones are golden brown and crisp on top.
- Serve: Allow the cobbler to cool for about 5 minutes before serving. Enjoy warm with clotted cream or vanilla ice cream for a rich and indulgent finish.
