- 200g carton passata
- Pack of 5 large Middle Eastern flatbreads

- ½ x 750g bag frozen spinach, defrosted
- 1 garlic clove, chopped
- 3 balls mozzarella, patted dry and torn
- 5 medium eggs
- Freshly grated nutmeg, to taste
- Small bunch basil
- Shaved parmesan (or vegetarian alternative), to serve
Instructions
- Preheat the oven. Heat the oven to as high as it will go to ensure a hot baking environment for a perfectly crispy base.
- Prepare flatbreads with sauce and toppings. Spread 1-2 tablespoons of passata evenly over each flatbread as the pizza base sauce. Squeeze as much water as possible from the defrosted spinach to prevent sogginess, then scatter the spinach on top of the passata, leaving the center clear for the egg. Divide the chopped garlic and torn mozzarella evenly over the flatbreads, seasoning generously with salt and pepper as you go.
- Bake pizzas with eggs. Place two prepared pizzas on a baking tray at a time. Carefully crack an egg into the center of each pizza where there is no spinach, being careful not to break the yolk. Season the eggs with freshly grated nutmeg and some basil leaves. Bake in the hot oven for about 7 minutes, or until the cheese has melted and the eggs are cooked to your preferred level.
- Repeat baking for remaining pizzas. After the first two pizzas are baked, repeat the baking process with the remaining pizzas, passata, spinach, garlic, mozzarella, eggs, nutmeg, and basil.
- Serve and garnish. Once all pizzas are cooked, garnish them with extra fresh basil and shaved parmesan or a vegetarian alternative. Cut the pizzas into slices and share among everyone.
