Ingredients
Balsamic Glaze:
- 1/2 cup balsamic vinegar
- 2 tbsp brown sugar
Caprese Mixture:
- 1/2 cup cherry tomatoes
- 2 tbsp fresh basil, chopped (more for garnish)
- 1/2 cup Mozzarella pearls
- 1/4 cup extra virgin olive oil
- Salt and pepper, to taste
Avocados:
- 2 avocados, large
Instructions
- Make brown sugar balsamic glaze
In a small saucepan, set over medium heat, combine balsamic vinegar and brown sugar. Stir until sugar dissolves, then simmer for 6-8 minutes until thickened. Remove from heat and let cool.
- Make the caprese
Cut cherry tomatoes in half. In a bowl, mix tomatoes, basil, and Mozzarella pearls with olive oil. Season with salt and pepper.
- Cut and fill avocados
Halve avocados, remove pits, and fill holes with caprese mixture.
- Drizzle with balsamic glaze
Top avocados with balsamic glaze. Add salt, pepper, and fresh basil for garnish.
- Serve and enjoy!
