  • 34 medium carrots, shredded (approximately 2 cups)

For the Dressing:

  • 1/3 cup light mayonnaise
  • 1/2 cup light sour cream or plain Greek yogurt
  • 2 tablespoons honey or monk fruit sweetener
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon apple cider vinegar
  • Juice of 1/2 lemon (approximately 2 tablespoons)
  • 1/2 to 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare Vegetables – Wash and slice the red cabbage into thin strips. Peel, chop, and shred the apple and carrots respectively. Add all vegetables to a large mixing bowl.
  2. Mix Dressing – In a separate bowl, combine mayonnaise, sour cream or Greek yogurt, olive oil, lemon juice, honey, apple cider vinegar, salt, and pepper. Whisk until smooth.
