Ingredients

Scale

Base

  • ¾ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar

Herbs & Olives

  • 2 tablespoons parsley leaves (finely chopped)
  • 2 tablespoons basil leaves (finely chopped)
  • 2 tablespoons Castelvetrano olives (chopped)
  • 2 tablespoons Kalamata olives (chopped)

Seasonings

  • 1 clove garlic (grated)
  • ½ teaspoon dried oregano
  • ¼ teaspoon flaky sea salt (or more to taste)
  • ¼ cup parmesan cheese (freshly grated)

Serving

  • fresh warm bread (for serving)

Instructions

  1. Combine olive oil and balsamic vinegar: In a shallow bowl, pour the extra virgin olive oil and drizzle the balsamic vinegar over the top to create the dipping base.
  2. Add herbs and olives: Finely chop the parsley, basil, Castelvetrano olives, and Kalamata olives. Add them into the bowl with the oil and vinegar mixture.
  3. Incorporate garlic and seasonings: Grate the garlic clove directly into the bowl. Add the dried oregano and flaky sea salt. Freshly grate the parmesan cheese on top.
  4. Mix thoroughly and serve: Stir all ingredients well so the flavors combine. Serve immediately alongside fresh warm crusty bread for dipping.

Notes

  • Use the freshest extra virgin olive oil you can find for best flavor.
  • You can adjust the amount of garlic and salt according to your taste.
  • Substitute fresh oregano for dried if preferred, but reduce quantity as fresh herbs are stronger.
  • This dip pairs well with focaccia, baguette, or any crusty bread.
  • Store leftovers covered in the refrigerator and use within 2 days.
