Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Cook Chicken: Add the diced chicken to the pot, and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through.
  4. Add Broth: Pour in the chicken broth, and bring the mixture to a boil.
  5. Simmer with Cream and Gnocchi: Reduce the heat and stir in the heavy cream, potato gnocchi, dried thyme, and oregano. Simmer for about 10 minutes, or until the gnocchi is tender.
  6. Add Spinach: Stir in the fresh spinach and cook for another 2-3 minutes until the spinach is wilted.
