Ingredients
Scale
Dairy & Butter
- 2 tablespoons unsalted butter
- 1 cup half and half
- 4 ounces cream cheese
- 1 cup parmesan cheese, freshly grated
- 1 cup mozzarella, freshly shredded
Vegetables & Herbs
- 10 ounces baby spinach, fresh
- 6 ounces jar marinated artichokes, drained
- 1 tablespoon chives, finely chopped for topping
Seafood
- 1 pound lump crab meat
Pantry & Condiments
- 2 tablespoons all-purpose flour
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
Instructions
- Make the roux: In a cast iron skillet, melt the butter over medium heat. Once fully melted, reduce heat to low and whisk in the flour. Slowly add the half and half quarter cup at a time, whisking constantly until the mixture is smooth and thickened.
- Add flavorings and cream cheese: Increase heat to medium-low, then add the cream cheese, Worcestershire sauce, and Dijon mustard. Stir continuously until the cream cheese melts completely and the sauce is smooth.
- Incorporate spinach: Add baby spinach in batches, stirring after each addition until the spinach wilts down. Continue adding spinach until all is incorporated and evenly coated with the sauce.
- Mix in crab and artichokes: Lower the heat to low, then gently fold in the drained marinated artichokes and lump crab meat, being careful not to break them up. Stir just enough to coat evenly.
- Add cheeses: Turn off the heat and stir in the freshly grated parmesan and shredded mozzarella cheeses thoroughly until fully combined.
- Broil the dip: Transfer the mixture to a baking dish or leave it in the cast iron skillet. Place under a broiler for 5-6 minutes, or until the cheese on top is melted and lightly browned.
- Garnish and serve: Sprinkle finely chopped chives on top. Let the dip cool slightly, then serve warm with crostini, crackers, or warm bread. Enjoy!
Notes
- Use lump crab meat for a superior texture and flavor.
- If you don’t have a broiler-safe skillet, transfer the dip to an oven-safe dish before broiling.
- For extra zing, add a pinch of cayenne pepper or smoked paprika to the sauce.
- Freshly grated parmesan and shredded mozzarella melt better and provide a richer flavor than pre-grated options.
- Serve with a variety of dippers like baguette slices, pita chips, or vegetable sticks for versatility.
