Instructions

  1. Make the roux: In a cast iron skillet, melt the butter over medium heat. Once fully melted, reduce heat to low and whisk in the flour. Slowly add the half and half quarter cup at a time, whisking constantly until the mixture is smooth and thickened.
  2. Add flavorings and cream cheese: Increase heat to medium-low, then add the cream cheese, Worcestershire sauce, and Dijon mustard. Stir continuously until the cream cheese melts completely and the sauce is smooth.
  3. Incorporate spinach: Add baby spinach in batches, stirring after each addition until the spinach wilts down. Continue adding spinach until all is incorporated and evenly coated with the sauce.
  4. Mix in crab and artichokes: Lower the heat to low, then gently fold in the drained marinated artichokes and lump crab meat, being careful not to break them up. Stir just enough to coat evenly.
