Sweet Potato Chili Chips

  • 4 large, roundish sweet potatoes, cut into chunky chips
  • 1 tsp olive oil
  • 1 tsp chili flakes, plus a pinch
  • Salt and black pepper, to taste

Beef Burgers

  • 400g pack extra-lean beef mince
  • 1 onion, grated
  • 1 tbsp grated parmesan
  • 1 tbsp tomato ketchup
  • Lots of black pepper, to taste

To Serve

  • 4 small wholemeal buns, halved
  • 1 Little Gem lettuce, leaves separated
  • 1 beef tomato, sliced
  • 1 red onion, sliced (optional)
  • 4 pickles or gherkins, halved

Instructions

  1. Prepare the sweet potato chili chips: Preheat the oven to 220C/200C fan/gas mark 7. Toss the chunky sweet potato chips with olive oil, 1 tsp of chili flakes, salt, and black pepper. Spread them out in a single layer on a large baking tray. Roast in the oven for about 30 minutes, turning halfway through to ensure even cooking and crispiness.
  2. Make the beef burger mixture: In a large bowl, combine the extra-lean beef mince with the remaining pinch of chili flakes, grated onion, grated parmesan, tomato ketchup, and a generous amount of black pepper. Mix well until all ingredients are evenly incorporated. Shape the mixture into four equal-sized burger patties.
  3. Bake the beef burgers: Approximately 10 minutes before the sweet potato chips are done, place the burger patties on a baking tray and bake them in the oven for 10 minutes or until fully cooked through.
  4. Assemble the burgers: While the burgers and chips finish cooking, prepare the buns by halving them. Layer the bottom halves of the buns with Little Gem lettuce leaves, tomato slices, and optionally, red onion slices.
  5. Serve: Place the baked beef burgers on top of the prepared buns. Cover with the top halves of the buns. Serve the burgers alongside the sweet potato chili chips with pickles or gherkins on the side for added tanginess.

  • Using extra-lean beef mince helps reduce the fat content, making this dish healthier.
  • If you prefer spicier chips, increase the chili flakes to taste.
