Roasted Red Pepper
- 1 red pepper, cut into quarters
- 1/2 tbsp olive oil (for roasting)
Burgers
- 400g lean steak mince
- 1 medium egg
- 1 carrot, coarsely grated
- 50g stale breadcrumbs
- 1 tbsp olive oil (for frying)
- 40g cheddar, finely sliced
To Serve
- 6 floury rolls, halved
- 3 tbsp mayonnaise
- ¼ cucumber, or 1–2 mini cucumbers, sliced
Instructions
- Roast the Pepper: Preheat your oven to 200°C (180°C fan) or gas mark 6. Place the quartered red pepper on a baking tray and rub it with half a tablespoon of olive oil. Roast in the oven for 25-30 minutes, turning once halfway through until softened and slightly charred. Remove from the oven and allow to cool slightly before finely chopping the pepper.
- Prepare the Burger Mix: In a large bowl, combine the lean steak mince, finely chopped roasted red pepper, medium egg, coarsely grated carrot, and stale breadcrumbs. Mix everything thoroughly with your hands until well combined and the mixture holds together.
- Form the Burgers: Shape the mixture into six equal-sized patties using your hands, ensuring they are compact and uniform for even cooking.
- Cook the Burgers: Heat the remaining one tablespoon of olive oil in a large, heavy-based non-stick frying pan over medium heat. Add the burger patties and cook for 5-6 minutes on each side, or until fully cooked through and browned on the outside.
- Add the Cheese: Once the burgers are nearly cooked, place a slice of finely cut cheddar on top of each patty to melt slightly while still in the pan.
- Assemble the Burgers: Spread mayonnaise on the cut sides of the floury rolls. Place the cooked burgers on the rolls and top each with slices of fresh cucumber for a crisp finish. Serve immediately and enjoy!

- You can use mini cucumbers instead of regular cucumber for a milder flavor and crunch.
- Use stale breadcrumbs or lightly toast fresh bread to make your own breadcrumbs for better texture.
