- 1 tbsp cornstarch

- 1 lb flank steak, thinly sliced against the grain
Noodles and Sauce
- 2 (3-oz.) packages beef ramen noodles, seasoning packets reserved
- 4 tbsp reduced-sodium soy sauce
- 1 tbsp cornstarch
- 2 tbsp oyster sauce
- 1 tbsp granulated sugar
- 3/4 cup water
- 1 ramen seasoning packet (from the two packets)
- 1 ramen seasoning packet (remaining from above)
Vegetables and Garnish
- 1 lb broccoli, cut into 3-inch long florets
- 2 tbsp toasted sesame seeds
Oils and Additional Flavorings
- 5 tbsp neutral oil, divided (such as vegetable or canola oil)
- 1 tbsp finely chopped garlic (additional)
- 1 tbsp finely chopped peeled ginger (additional)
Instructions
- Marinate the Beef: In a large bowl, whisk together rice vinegar, 2 tablespoons soy sauce, 1 tablespoon cornstarch, 1 tablespoon garlic, and 1 tablespoon ginger until the cornstarch is fully dissolved. Add the thinly sliced flank steak and toss to coat. Let it marinate at room temperature for 15 to 30 minutes to absorb the flavors and tenderize.
- Cook the Ramen Noodles: Bring a medium pot of water to a boil over high heat. Stir in the contents of one ramen seasoning packet to dissolve. Add both packages of ramen noodles and cook, stirring occasionally, until they are just tender, about 2 minutes. Use a fork to break up any noodle clumps, then drain them thoroughly.
- Prepare the Sauce: In a small bowl, whisk the remaining 4 tablespoons soy sauce with 1 tablespoon cornstarch until smooth. Add the oyster sauce, sugar, the second ramen seasoning packet, and 3/4 cup water. Whisk together until all ingredients are combined well.
- Cook the Beef: Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat until shimmering. Add half of the marinated beef in an even layer and cook without stirring until browned on the bottom, about 2 to 3 minutes. Stir to redistribute and continue cooking, stirring often, until the beef is just cooked through, about 30 seconds more. Transfer the beef to a plate. Repeat the process with another tablespoon of oil and the remaining beef slices.
- Cook the Broccoli: In the same skillet over medium-high heat, add 2 tablespoons oil and the broccoli florets. Cook, stirring often, until the broccoli is bright green and tender-crisp, about 1 to 2 minutes.
- Sauté Aromatics: Push the broccoli to one side of the skillet. Add the remaining 1 tablespoon oil, 1 tablespoon garlic, and 1 tablespoon ginger to the empty side of the pan. Cook, stirring constantly until fragrant, about 30 seconds to 1 minute, then mix the aromatics with the broccoli.
- Add Sauce and Simmer: Give the prepared sauce a quick stir and pour it over the broccoli mixture. Cover the skillet and cook until the broccoli is just tender, about 2 to 4 minutes.
- Combine All Ingredients: Remove the cover and add the drained ramen noodles, cooked beef, and any accumulated juices back into the skillet. Toss everything together to coat evenly with the sauce. Continue cooking, tossing frequently, until heated through and the sauce slightly thickens, about 1 to 2 minutes.
- Serve: Sprinkle toasted sesame seeds over the top and serve the Beef & Broccoli Ramen hot for a satisfying meal.
