Ingredients
Scale
Meat and Vegetables
- 1 pound ground beef
- 1 pound bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup green onions, chopped (for garnish)
Cheese and Dairy
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese, divided
- 1 cup sour cream
- 1 cup milk
Pantry Staples and Seasonings
- 1 cup BBQ sauce, plus extra for drizzling (optional)
- 1 package (16 oz) elbow macaroni
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- Cook the bacon. In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes, stirring occasionally to ensure even cooking.
- Drain bacon grease. Use a slotted spoon to remove the crispy bacon and place it on a paper towel-lined plate to drain off excess grease, leaving about 2 tablespoons of bacon grease in the skillet for additional flavor.
- Sauté onions and garlic. Add the diced onion to the skillet with the reserved bacon grease and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Cook the ground beef. Add the ground beef to the skillet, breaking it up with a spatula. Season with salt, black pepper, smoked paprika, onion powder, and garlic powder. Cook until browned and fully cooked, about 6-8 minutes. Drain excess fat if needed.
- Combine meat and bacon with BBQ sauce. Return the crispy bacon to the skillet and pour in the BBQ sauce. Stir well to combine and let simmer for 2-3 minutes to meld flavors. Remove from heat and set aside.
- Cook macaroni. While the meat mixture simmers, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain well.
- Make creamy macaroni base. Return the drained macaroni to the pot and stir in the sour cream and milk until evenly combined and creamy.
- Preheat oven. Set your oven to 350°F (175°C) to prepare for baking the casserole.
- Mix casserole ingredients. In a large mixing bowl, combine the creamy macaroni mixture with the meat and bacon mixture. Stir in half of the shredded cheddar and mozzarella cheeses until everything is evenly distributed.
- Assemble casserole. Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly for consistent cooking.
- Top with cheese. Sprinkle the remaining cheddar and mozzarella cheese evenly over the top of the casserole. For extra BBQ flavor, optionally drizzle additional BBQ sauce over the cheese layer.
- Bake covered. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to allow the flavors to meld and the casserole to heat through.
- Bake uncovered. Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden brown on top.
- Rest the casserole. Let the casserole sit for 5-10 minutes after baking to help it set and make serving easier.
- Garnish. Sprinkle chopped green onions over the top just before serving to add freshness and color.
- Serve and enjoy. Scoop out portions and serve warm with your favorite sides like a crisp salad or garlic bread. Enjoy this hearty BBQ Bacon Cheeseburger Casserole with family and friends!
Notes
- For a milder BBQ flavor, adjust the amount of BBQ sauce to taste.
- Use freshly grated cheese for better melting and flavor.
- Letting the casserole rest before serving helps it hold together when sliced.
- You can substitute elbow macaroni with other pasta shapes like shells or rotini if preferred.
- Make sure to drain excess grease from the cooked beef to prevent the casserole from becoming too oily.
- This casserole can be made ahead and refrigerated; just bake longer if baking cold.
- For extra texture, add a crunchy breadcrumb topping before baking uncovered.
