Ingredients
Scale
Chicken and Seasoning
- 2 pounds chicken breast, cut into 1-inch pieces
- 1 tablespoon sesame oil
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 2 teaspoons sriracha
Bang Bang Sauce
- ⅓ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 teaspoons lime juice
- 1 teaspoon sriracha
Cooking
- 2 tablespoons cooking oil (such as vegetable or canola oil) for frying
Instructions
- Make the bang bang sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined. Set aside.
- Prepare the chicken: Cut the chicken breasts into 1-inch pieces. In a large bowl, add the chicken along with sesame oil, cornstarch, salt, pepper, garlic powder, and 2 teaspoons sriracha. Toss thoroughly to evenly coat all pieces with the seasoning mixture.
- Cook the chicken: Heat a large non-stick skillet over medium-high heat and add 2 tablespoons of cooking oil. When the oil is hot, add the chicken pieces in a single layer without overcrowding. Let the chicken cook undisturbed for 3-4 minutes to develop a crispy crust, then flip and cook for another 4-5 minutes until the chicken is fully cooked and no longer pink in the center.
- Toss with bang bang sauce: Remove the skillet from heat and immediately toss the cooked chicken bites in the prepared bang bang sauce until well coated.
- Serve: Serve the bang bang chicken bites hot, either over cooked rice or atop shredded cabbage for a light, crunchy base.
Notes
- Ensure the chicken pieces are cut uniformly for even cooking.
- Adjust the amount of sriracha to your preferred spice level.
- Use a non-stick skillet to prevent sticking and make flipping easier.
- For a lighter option, try baking the chicken bites instead of pan-frying.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
