  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

These Baked Cheesy Bean Burritos are a comforting and flavorful vegetarian meal featuring soft flour tortillas filled with a creamy bean mixture, topped with rich enchilada sauce and melted sharp cheddar cheese. Perfect for an easy weeknight dinner, they are baked to bubbly perfection and garnished with fresh cilantro, pico de gallo, and sour cream for added zest and creaminess.

Ingredients

Scale

Filling

  • 2 cans refried beans
  • 1/2 cup salsa
  • 1/2 cup sour cream

Burritos

  • 4 extra large flour tortillas (burrito size)
  • 1.5 cups sharp cheddar cheese, divided

Sauce and Toppings

  • 10 ounces red enchilada sauce (1 can)
  • Chopped cilantro, for garnish
  • Pico de gallo, for garnish
  • Sour cream, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it’s ready for baking the burritos evenly and thoroughly.
  2. Prepare Bean Mixture: In a large mixing bowl, combine the refried beans, sour cream, and salsa. Stir well until the ingredients are fully incorporated to create a creamy and flavorful filling.
  3. Assemble Burritos: Lay one flour tortilla flat on a clean surface. Spoon one quarter of the bean mixture onto the center of the tortilla. Sprinkle approximately 1/3 cup of sharp cheddar cheese over the bean mixture.
  4. Roll Burritos: Fold the sides of the tortilla inward over the filling, then tightly roll it up burrito-style to encase the filling. Place the rolled burrito seam side down in a lightly greased 9×13 inch casserole dish.
  5. Repeat Assembly: Repeat the process with the remaining tortillas and filling until all four burritos are arranged snugly in the casserole dish.
  6. Add Sauce and Cheese: Pour the red enchilada sauce evenly over the tops of the burritos in the casserole dish. Sprinkle any remaining sharp cheddar cheese over the sauced burritos for a cheesy crust.
  7. Bake: Place the casserole dish on the lower oven rack. Bake for 20 to 25 minutes, or until the burritos are hot throughout and the cheese is melted and bubbly.
  8. Garnish and Serve: Remove the burritos from the oven and let them cool for a couple of minutes. Garnish with chopped cilantro, pico de gallo, and additional sour cream as desired before serving.

Notes

  • For extra protein, add cooked chicken or ground beef to the filling if not vegetarian.
  • Use whole wheat or low-carb tortillas for a healthier option.
  • Make ahead by assembling the burritos and refrigerating for up to 24 hours before baking.
  • Adjust the spice level by using mild or hot salsa and enchilada sauce according to preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
