Ingredients

  • 100g butter, softened
  • Small bunch rosemary sprigs, leaves picked and chopped, plus extra sprigs to decorate
  • Flour, for dusting
  • 880g ready-made pizza dough, defrosted if necessary (we used The Northern Dough Co), or homemade dough
  • 150g cranberry sauce
  • 250g box camembert or chaource (or vegetarian alternative)
  • Oil, for drizzling

Instructions

  1. Step 1: Mash the softened butter with the chopped rosemary and some seasoning in a bowl until well combined.
  2. Step 2: Lightly flour your work surface and cut the dough into four sections if needed. Roll out one piece at a time to about 4mm thickness, keeping the unused pieces covered.
  3. Step 3: Use a 7cm round cutter to cut 30 to 36 circles from the dough.
  4. Step 4: Spread the rosemary butter over half of the dough circles. Spread cranberry sauce over the remaining circles.
  5. Step 5: Fold each circle in half and pinch the two pointed ends together, forming a petal shape similar to a fortune cookie.
  6. Step 6: Line a large baking tray with parchment. Place the camembert, still in its box but without the lid, in the center of the tray.
  7. Step 7: Arrange a ring of dough petals around the cheese, alternating rosemary butter and cranberry fillings. Tuck the pointed ends underneath the cheese box.
  8. Step 8: Add a second ring of petals around the first, tucking the points under the previous row. Repeat with the remaining petals to create a flower pattern.
  9. Step 9: Loosely cover the tray with oiled cling film and leave in a warm spot to prove for 30 minutes or until nearly doubled in size.
  10. Step 10: Preheat the oven to 180°C (160°C fan)/Gas 4. Remove the cling film and slash the top of the cheese a few times. Insert fresh rosemary sprigs into the cheese.
  11. Step 11: Drizzle the entire flower with a little oil and bake for 35-40 minutes, or until golden brown.
  12. Step 12: Let cool for 5 minutes before serving.

  • To make ahead, shape the dough and remove the cheese (leaving the box in place). Wrap the dough in oiled cling film and freeze for up to two months. Defrost at room temperature or overnight in the fridge, allow to prove, then replace the cheese and bake as directed.

Storage

Store any leftovers covered at room temperature for up to 1 day. Reheat gently in a low oven to refresh the bread and warm the cheese without drying it out. It’s best enjoyed fresh but can also be wrapped tightly and frozen for up to one month.

  6. Proof the Dough: Loosely cover the tray with oiled cling film and leave it in a warm place to prove for 30 minutes or until nearly doubled in size.
  7. Prepare for Baking: Preheat the oven to 180°C (160°C fan)/Gas mark 4. Remove the cling film. Slash the top of the cheese a few times to allow steam to escape, insert rosemary sprigs into the cheese, and drizzle oil over the dough petals and cheese.
