Instructions

  1. Prep the Vegetables: Chop the tomatoes into small pieces, mince the garlic cloves, and chop the onion finely to prepare the base for the sauce.
  2. Cook the Spaghetti: Boil the 7 ounces of spaghetti according to the package instructions until al dente. Reserve 1/4 cup of the starchy cooking water before draining the pasta.
  3. Sauté Garlic and Onion: Heat 2 teaspoons of olive oil in a pan on high heat. Add the minced garlic and chopped onion and cook, stirring frequently, until the onions turn translucent, about 1 minute.
  4. Add Tomato: Add the chopped tomato to the pan and stir continuously to prevent burning. Cook until the tomatoes reduce and soften into a mushy texture.
  5. Season the Sauce: Season the tomato mixture with salt to taste, freshly ground black pepper, dried oregano, and tomato paste. Mix well and let the sauce cook for another 2 to 3 minutes to deepen the flavors.
