Ingredients
Scale
Pasta
- 7 ounce Spaghetti
- 2 teaspoon Olive Oil
Vegetables
- 2 clove Garlic, minced
- 1 cup Tomato, chopped
- 1 cup Onion, chopped
Seasonings & Sauce
- 2 teaspoon Dried Oregano
- 2 teaspoon Freshly Ground Black Pepper
- to taste Salt
- 2 teaspoon Tomato Paste
- 2 tablespoon Almond Butter
Toppings
- to taste Cheese
- to taste Slivered Almonds
Instructions
- Prep the Vegetables: Chop the tomatoes into small pieces, mince the garlic cloves, and chop the onion finely to prepare the base for the sauce.
- Cook the Spaghetti: Boil the 7 ounces of spaghetti according to the package instructions until al dente. Reserve 1/4 cup of the starchy cooking water before draining the pasta.
- Sauté Garlic and Onion: Heat 2 teaspoons of olive oil in a pan on high heat. Add the minced garlic and chopped onion and cook, stirring frequently, until the onions turn translucent, about 1 minute.
- Add Tomato: Add the chopped tomato to the pan and stir continuously to prevent burning. Cook until the tomatoes reduce and soften into a mushy texture.
- Season the Sauce: Season the tomato mixture with salt to taste, freshly ground black pepper, dried oregano, and tomato paste. Mix well and let the sauce cook for another 2 to 3 minutes to deepen the flavors.
- Add Almond Butter: Stir in 2 tablespoons of almond butter into the sauce to create a creamy texture. Add a splash of the reserved starchy pasta water to adjust the consistency and bring the sauce to a boil for 2 minutes, allowing all ingredients to meld together.
- Combine with Pasta and Serve: Add the cooked spaghetti to the sauce and toss thoroughly to coat all strands evenly. Serve topped with cheese and slivered almonds to taste for added richness and crunch.
Notes
- Reserve some pasta water to adjust sauce consistency; it helps to bind the sauce to the pasta better.
- Use freshly ground black pepper for an optimal flavor punch.
- For a dairy-free option, omit the cheese or use a vegan substitute.
- Slivered almonds add a delightful crunch — toast them lightly for extra flavor.
- Be careful not to burn garlic and onion by stirring frequently and cooking on medium-high heat.
